Ingredient: 4@egg whites 220g@caster sugar 1 tsp@white vinegar 1 tsp@cornstarch 1 tsp@vanilla extract 3 @passion fruit 125g@whipping cream, fully whipped 150g@fresh fruits (can be mango, strawberry, peach or kiwi),cut into slices
Preheat the oven to 140℃, line the baking tray with parchment. Remove the flesh from the passion fruit and finely chopped. Beat the egg whites until frothy with a mixer, add the sugar in batches. Beat until the egg white is shiny, use your finger to feel if the sugar has dissolve completely and turn the mixing to low. Add the cornstarch, vinegar and vanilla extract. Beat for one more minute to become a meringue. Put the meringue on the baking tray, use a spatula to spread it to about 25 cm across and 6 cm high. No need to shape it too neatly. Bake for 1 1/2 hour, turn off the heat and leave the meringue cool inside the oven. Put the cooled meringue on a dish, top with whipped cream and pour over passion fruit juice. Garnish with slice of fruits and serve.
