<p><strong>冰鮮雞欠嚼勁<br /></strong>冰鮮雞需貯藏0°C至4°C,一般可在冰箱中貯3至5日。需經中央屠坊宰殺,一般會在前一天將雞隻宰殺,包裝後運送到市場。雖與活雞相似,雞肉鮮明,但經過一天的貯藏後,肉質會有少許鬆弛,口感腍軟但欠嚼勁。已包裝及未包裝的冰鮮雞,品質難免會參差和難於辨別。</p>
<p><strong>急凍雞耐貯藏<br /></strong>急凍雞是在極短時間內將雞肉降溫至 -18°C,並要放入冰格冷凍貯存,能長時間保存,可長至1年,減低細菌生長之餘,可鎖緊雞肉內的水分,肉質軟腍。不過解凍後,雞肉除了水分特別多,因而流失部分肉味和鮮味,肉質久嚼口外,容易令細菌迅速生長,需即時烹煮為佳。</p>{/content}[/wgt_tinymce_editor][/yee_column][/yee_row]
