1.先用隔篩將麵粉中的雜質及較粗的粉團隔離。</p>

<p>2.混合麵粉、奶粉及吉士粉。</p>

<p>3.將混合物形成一個圓形,並預留空間給中間的位置。</p>

<p>4.將雞蛋與砂糖加到中間位置,並以同一方向打圈式 拌勻,直至沒有粒狀。</p>

<p>5.加入牛油拌勻,再將麵粉逐少拌入。</p>

<p>6.將麵團反覆搓揉,不要太用力以致起筋。</p>

<p>7.把已搓好的麵團放進食物箱,儲存於雪櫃最少45分鐘。</p>

<p>8.從雪櫃取出麵團,並放到室溫,令其回軟。</p>

<p>9.把已軟化的麵團切成細粒,然後用手壓勻成圓形。</p>

1.先以攪拌機將雞蛋、麵粉及砂糖拌勻,直至沒有粒狀。</p>

<p>2.再將已放軟身的牛油、椰奶及煉奶加入攪拌機拌勻。</p>

<p>3.把餡料放進蒸盤內以隔水蒸熟。</p>

<p>4.所需時間視乎蒸爐大小,完成後用筷子捲起以糕狀為佳。</p>

<p>5.把已磨好的伯爵茶茶葉末碎混入餡料內,以攪拌機拌勻,儲存於雪櫃直至第二天。</p>

<p>6.把餡料放到室溫,令其回軟。</p>

1.預熱焗爐至攝氏250度。</p>

<p>2.把餅皮壓勻成圓形,把餡料釀入餅皮內,形成一個球狀。</p>

<p>3.餅模及餡團同時先撒上少量麵粉,減少其黏性,方便從餅模中倒出來。</p>

<p>4.把奶皇餡團放進餅模中,用力壓實,將餅模左右兩側用力撞擊桌邊,然後把月餅拍出來。</p>

<p>5.放進焗爐約10分鐘至金黃色即可。</p>
