<p>和很多蔬菜一樣,西洋菜主要是背靠祖國供應,香港吃到的主要水種品種,在水田或淺溝湖澤地帶生長,正好荃灣的川龍村位於大帽山的山腰一帶,霧影繚繞,濕潤氣候,十分適合西洋菜種植。</p>

<p>補眼抗衰老</p>
<p>西洋菜屬冬春常見的蔬菜,當造期由9月開始至翌年4月,它蘊含豐富葉酸、鐵質、胡蘿蔔素和葉黃素,能強化視力和延長衰老,尤其人體無法自身製造葉黃素,須依靠食物攝取作補充,若缺少了就會有失明的危險;同時葉黃素也是很好的抗氧化劑,保護細胞避免受自由基傷害。</p>

<p>處理要小心</p>
<p>莖短而挺直飽滿、葉片濃密而呈深綠色且無黑點的西洋菜就是優質,不過易藏有水蛭,必須小心清洗,可用淡鹽水浸30分鐘,令內裏隱藏之水蛭蜷曲沉底,再用流水徹底清洗即可。由於它的質感較韌,最常用作放湯,其實只要挑選嬌嫩的菜苗,或以手摘菜,不妨清炒或焯,只要注意「三要」:鑊要熱、油要多、兜炒要快,就能炒出嫩口無渣的西洋菜。</p>{/content}[/wgt_tinymce_editor][/yee_column][/yee_row]
