<p>註冊營養師陳國賓表示,不少人平日帶飯偏向多肉少菜,做法似乎不太健康,卻又無可厚非,他解釋:「蔬菜中的維他命B(B1, B2)或 C,經過長時間冷藏和貯存,都會受到較嚴重的破壞,營養容易流失,他說:「不過這也並非帶了、吃了就如同沒吃,只是跟新鮮的蔬菜比較,無疑營養是有所相差。」</p>

<p>至於肉類,煎雞翼、煎豬扒都是熱門的帶飯餸菜,不過最理想的「帶肉」方式,是不要把肉類煎或炸,他解釋:「因為肉類中的脂肪經過煎煮,再貯存一段長時間,過程中會出現氧化,即使貯存過程經過冷藏,這也不會減緩氧化的速度,油脂經過氧化,如果我們經常進食便會增加患癌的風險。」如果想帶肉類,比方說煮雞翼,可以採用炆的方法,或者選擇帶蒸肉餅、蒸魚等,減少煎炸油膩的食物,除了能吸收較少脂肪,也可以減低患癌的機會。</p>
