說許美德是大師,行內絕對無人反對。<br />
潮州土生土長,掌廚超過30年,曾獲得中國金馬飯店金馬獎「十大名廚」的榮譽。博文強記,對潮菜歷史文化倒背如流,堪稱人肉潮菜百科全書。現為「百樂潮州」總廚,群生飲食技術人員協會主席,經常在電視、電台、雜誌、報章接受訪問推廣潮州菜,全情投入推廣潮州菜文化,潮州富豪及大商家,差不多個個都吃過他的出品,是本地公認潮菜教父。<br />
「朋友俾面啫,呢啲都係朋友俾面啫。」許師傅以一貫柔和謙虛的態度回應。<br />
朋友俾面,食客也俾面,採訪當日,滿樂中菜早已訂座爆滿,晚市座無虛席,許師傅又樓面又廚房,進進出出,忙個不亦樂乎。</p>

忙,其中一個原因,是要金睛火眼監察着出品是否妥當,因為今次的菜式,突破了他一向擅長的潮菜菜系,以粵菜為基礎,融合大江南北風格,融匯改良,由點心到燒味,由湯水到大菜,樣樣都是精緻,件件都是精品。</p>

<p>像招牌菜式黃金釀蟹蓋,蟹肉以人手鮮拆。椒鹽九肚魚竟用人手剔骨。經典粵菜金牌菠蘿咕嚕肉,塊塊炒得掛醬香郁。鴛鴦胡椒焗蝦,海蝦用了生熟胡椒來焗,香辣惹味。粵菜館不可或缺的杏汁燉白肺湯,濃郁滋潤,飲完胸臆舒暢到禁不住要呀~~一聲。「南北杏我哋用石磨磨的,質感特別細滑,杏味特別濃。」許師傅說。</p>

<p>連點心也做到件件精巧,原隻鮑魚燒賣皇,大大隻鮑魚很矜費。叉燒酥,下了遠年陳皮,特別香醇。水牛芝士奶黃包,竟然可以拉絲,真的連手機先食的年輕一俗都佩服。還有片皮鴨,重金從德國訂購烤爐,烤鴨上桌熱辣,鴨皮酥脆。就是薄餅皮也是自家製,青瓜、京蔥、蘿蔔、子薑、哈蜜瓜和甜麵醬等佐料有齊,不遜京菜館的烤鴨陣容。</p>

店子裝潢也讓人有新鮮感和藝術感,中式園林為藍圖,翡翠色牆壁,東方花卉為主題的畫作,讓人仿似在園林,也仿似在畫廊。8,000平方呎的舖位,只設260個座位,座位編排寬敞,空間感充足,坐得舒適。除了圓枱,又設馬蹄形廂座,一班人舒舒服服又有私隱。又有兩間貴賓廳,一間可放置兩張圓桌,共納24位賓客。</p>

<p>另一間貴賓廳則以紅寶石色壁紙及典雅的花卉圖案為主題,豪華得來又富藝術感,而且空間驚人,可容納七席飲宴,近八十多人聚餐不成問題,一間貴賓房根本就是人家一間店舖的空間,辦婚宴開派對最好,難怪一早就被人訂滿,生意火紅。「朋友俾面啫,呢啲都係朋友俾面啫。」許師傅又以一貫謙虛口脗回應。大師,果真有大師的氣度。</p>
