<p style="text-align: right;">絞豬肉 100 克</p>
<p style="text-align: right;">花椒碎 1/2 茶匙</p>
<p style="text-align: right;">郫縣豆瓣醬 1 湯匙(剁碎)</p>
<p style="text-align: right;">薑米 1 湯匙</p>
<p style="text-align: right;">蒜蓉 1 湯匙</p>
<p style="text-align: right;">葱花 2 湯匙</p>
<p style="text-align: right;">生抽 1 茶匙</p>
<p style="text-align: right;">料酒 1 湯匙</p>
<p style="text-align: right;">糖 2 茶匙</p>
<p style="text-align: right;">陳醋 2 湯匙</p>
<p style="text-align: right;">麻油 1/2 茶匙</p>
<p style="text-align: right;">生粉 1 茶匙</p>

<p>1. 絞豬肉拌入生抽和1湯匙水,醃15分鐘。</p>
<p>2. 茄子去蒂,連皮切成1.5 cm x 6cm長條,加入淡鹽水(1000毫升水對1湯匙鹽)中浸泡15分鐘,再用廚紙吸乾水份。</p>
<p>3. 鑊中大火燒熱兩杯油,見油熱至冒青煙(約170度),放下茄子炸至茄肉微微焦黃,即撈出瀝油。</p>
<p>4. 倒出餘油,留下兩湯匙油,放下薑米、蒜蓉、葱花、花椒碎和豆瓣醬一同爆香。</p>
<p>5. 加入絞豬肉翻炒,濽酒,加糖和陳醋,及2湯匙水煮沸。</p>
