<p><strong>材料:</strong></p>

<p>茄子2條、九層塔葉40片、蔥1條、蒜頭1粒</p>

<p><strong>調味料:</strong></p>

<p>蠔油1大匙、米酒1茶匙、醬油2茶匙、醬油膏1大匙、糖1茶匙、烏醋2茶匙、香油2茶匙、鹽1/2茶匙</p>

<p><strong>做法:</strong></p>

<p>1. 茄子對開切滾刀塊,入塑膠袋加1/2茶匙鹽晃勻醃味備用。</p>

<p>2. 取蔥綠切花、蒜頭拍碎切末、10克九層塔葉切末。</p>

<p>3. 將所有調味料拌勻。</p>

<p>4. 起160度油鍋,依序放入茄子塊、九層塔葉炸香後一起撈起瀝油備用。</p>

<p>5. 起鍋不加油,爆香九層塔末、蒜頭後,加進步驟4的茄子、九層塔葉翻炒均勻,再淋入步驟3醬汁,放進蔥綠炒勻即可。&nbsp;</p>

<p><strong>國際癌症研究組織(IARC)將丁香酚歸類為3類物質,即動物致癌性不足或有限,而人類致癌性證據仍不足。</strong></p>

<p><strong>另黃樟素歸為2B物質,即有動物致癌性但人類致癌性證據仍不足。</strong></p>

<p><strong>因此,依照一般人的食用量並不會有致癌的疑慮。</strong></p>
