<p><span style="color:#800080"><span style="font-size:14px"><strong>廣東人說節瓜正氣,不寒不燥,老少咸宜。</strong></span></span>香港和廣東四季都有出產,沒有當茬不當茬,價格也是平平穩穩,如此無性格之物,首推節瓜。</p>

<p>中國北方沒有生產節瓜,那裡大多數人都不知道有節瓜此物,更不會吃節瓜。<span style="line-height:1.6em">我在北京生活時,市場上有南方運去的絲瓜,卻未見過有節瓜,問北京的年輕朋友,反應是:「哇舍」!有毛的瓜?未見過。</span></p>

<p>正正因為節瓜夠普通,<span style="color:#800080"><span style="font-size:14px"><strong>當你買菜時想不起要做甚麼菜式,又未決定放到那一天才吃,要買一些既可耐保存,又容易配搭的材料,不如就買一兩個節瓜。</strong></span></span>家裡有幾片豬肉,加個鹹蛋,最後弄個雞蛋花,便是個快速的家常湯,要豪華一點的,把幾個乾珧柱浸軟了,燜上節瓜,方便又美味,出得廳堂見得人,一點也不失禮。</p>

1. 把節瓜刮皮去囊,洗淨後切成長條形,備用。<br />
2. 乾珧柱用125毫升水浸軟,撕成絲,放回浸的水中,加入薑汁和糖,隔水蒸10分鐘,備用。<br />
3. 中火燒熱2湯匙油,爆香蒜茸,放入節瓜同炒至八成熟,倒入珧柱及浸汁兜勻。<br />
4. 加入清雞湯,大火煮沸後,轉小火加蓋燜煮15分鐘,至節瓜腍透。<br />
5. 把節瓜盛出,在珧柱汁中用生粉打薄芡收汁,最後加入麻油後把汁和珧柱淋在節瓜上,即成。</p>
