生食有「營」定煮熟養生?

不過有些菜式,還是生吃比較好味,像沙律菜、水果等,生吃似乎更爽脆多汁。<br />
<span style="color:#FF8C00"><span style="font-size:14px"><strong>現世代也有主張生吃Raw Food Diet的支持者,認為高溫加熱烹煮會破壞營養,</strong></span></span><br />
令我們不能從食物中吸收營養,增進生命能量,故Raw Food Diet也稱為生機飲食。</p>

<p>無可否認,<span style="color:#FF8C00"><span style="font-size:14px"><strong>若干對身體有益的養份,如維他命C、葉酸、礦物質等,會因烹煮被破壞摧毀</strong></span></span>,令我們能夠消化吸收的營養大減。<br />
但也有煮熟比生吃營養更好的食材,最佳例子是番茄,其所含的茄紅素既不會因加熱而失去,而且比起生吃,煮熟後的茄紅素甚至高出三至四倍,這已獲科學印證。</p>

<p>除了洗淨去皮直接吃(姑且稱之為祼吃!),其實所謂生吃,也有不少處理步驟。食物種類從水果、蔬菜、果仁、種子、豆芽、穀類、(發芽)莢豆類、海藻、微藻類(如螺旋藻),<span style="color:#800080"><span style="font-size:14px"><strong>處理方法有浸泡發芽、發酵、醃漬、用萬磨機或攪拌機打爛榨汁、食物風乾機Dehydrator低溫脫水等,都是生吃飲食常用的食材處理程序。</strong></span></span><br />
此外,生吃飲食界人士普遍同意,<span style="font-size:14px"><strong><span style="color:#800080">只要加熱溫度低於攝氏40-47度之間,營養未被破壞,是可以接受的輕微「烹煮」</span></strong></span><span style="color:#800080">,</span>但不同的生吃社群,是會有些微差異的。</p>
